Part of the human diet for thousands of years, fish is considered important for a healthy diet due to its high content of unsaturated fatty acids. But, predominantly in regions with a high consumption of fish like Scandinavia, Japan or Mediterranean countries, fish allergies represent a significant problem. In most cases, such allergy is induced by the low-molecular muscle protein parvalbumin. This protein is characterized by its high heat resistance and stability against denaturing agents and proteolytic enzymes.

Furthermore, the presence of fish in foodstuffs must be clearly labeled by law in countries such as Canada, Australia, New Zealand, Japan among others.
