Part of the human diet for thousands of years, fish is considered important for a healthy diet due to its high content of unsaturated fatty acids. But, predominantly in regions with a high consumption of fish like Scandinavia, Japan or Mediterranean countries, fish allergies represent a significant problem. In most cases, such allergy is induced by the low-molecular muscle protein parvalbumin. This protein is characterized by its high heat resistance and stability against denaturing agents and proteolytic enzymes.
For people suffering from a fish allergy, hidden fish proteins in food are a critical problem. Any intake of fish must be strictly avoided to prevent potentially fatal allergic reactions.
Finned fish and shellfish are not from the same family, so being allergic to one does not necessarily mean that an allergic individual must avoid both.
Mandatory labeling of fish residues in food
Fish is one of the so called “Big 8” of food allergens that fall under the labeling requirements of the U.S. FDA – FALCPA (2004). It is also on the list of priority allergens according to
Regulation (EU) No 1169/201 in Europe. Furthermore, the presence of fish in foodstuffs must be clearly labeled by law in countries such as Canada, Australia, New Zealand, Japan among others.
