Food allergies are a growing global health concern. Their prevalence has been increasing in recent decades worldwide. For example, in Australia, prevalence levels have reached 10%* among infants and 5% among young children.

Since allergen avoidance is, for now, the only available treatment for people suffering from food allergies, correct product labelling is indispensable. Food producers must also ensure that no cross-contamination occurs by setting up appropriate allergen management programmes in their production facilities. With all these different policies and procedures, how do we ensure regulatory compliance? How is a risk assessment best carried out? Is there a best practice guideline for allergen analysis?

Jasmine Lacis-Lee of the Allergen Bureau will provide us with an industry perspective both on managing food allergens in the production chain and on identifying preventive strategies to cope with increasing prevalence of food allergies. The Allergen Bureau, which is co-organizing this webinar, is the chief industry body representing allergen management in the food industry in Australia and New Zealand and aims to share information and best practices on allergen detection and management.

Meet the Speakers:

Jasmine Lacis-Lee, BASc.

Food Safety Manager at DTS Food Assurance 

Jasmine currently works for DTS Food Assurance as their Food Safety Manager – Microbiology and Allergens. In this role, she is responsible for providing guidance to the food industry with relation to result interpretation, mitigating microbiological and allergen risks in facilities and providing training to clients. 

She began her career in the food industry more than 20 years ago working as a microbiologist in a commercial food-testing laboratory. In 1998, Jasmine joined Parmalat, holding various roles in her time there including managing the NATA accredited Microbiology Laboratory, and held roles such as National Pathogen Laboratory Manager and the company’s Senior Microbiologist. In this role, she was charged with writing and implementing the company’s first National Allergen Management Plan and testing regime in the early 2000s, along with providing support on other microbiological and food safety risks in the business. In 2013, Jasmine moved to Coca Cola Amatil’s largest facility in QLD as Food Safety Manager, responsible for the management of the laboratory team, the sites quality system and providing technical support with regard to quality and equipment validation. 

Jasmine was elected as a director to the Allergen Bureau Board in 2018, where she is able to continue her support to the industry in producing safer food for consumers.

Martin Candia, MSc
Product Manager at Romer Labs

Martin Candia has joined Romer Labs in November 2018 as product manager for the Allergens division and has already been involved in method validation and application support in allergen testing. He provides scientific and technical advice to sales staff worldwide and conducts workshops and webinars for customers.  

He has extensive experience in the allergy field and has participated in projects aimed to develop both prophylactic and therapeutic treatments for allergies in children and adults. In the past he has particularly focused first on cow’s milk allergy and then in the modulation of the allergic response by the use of peptides.

As a speaker, he has participated in numerous allergy-focused conferences, including the European Academy of Allergy and Clinical Immunology congresses of 2015 and 2016, held in Barcelona, Spain and Vienna, Austria respectively, and the International Congress of Immunology 2016 in Melbourne, Australia.

He holds a Master of Science’s degree in Molecular Biology and Biotechnology from the National University of La Plata, where he specialized in Immunology. Furthermore, he continued his studies in the PhD program on Molecular, Cellular and Clinical Allergology from the Medical University of Vienna.
