Food Engineer with over 20 years of experience in the food and beverage industry. She has led changes in quality and food safety systems in prominent companies. With a World Class qualification for Unilever Argentina's production plants, she has technically reviewed 527 Food Safety audits for suppliers of Walmart (USA), Carrefour (France), and La Anónima (Argentina). She directs her own consulting firm specialized in Food Allergen Management, with a unique approach (M4E) implemented in various companies in Latin America and Spain. She holds the official endorsement of the Allergen Bureau and is the first authorized trainer of the VITAL Program in Spanish and Portuguese. Her purpose is to simplify processes and improve the quality of life for those suffering from food allergies. An international speaker, author, and university lecturer, she leads a community of over +14,000 professionals on LinkedIn.

Martin Candia - Product Manager

Martin Candia joined Romer Labs in November 2018 as Product Manager of the Allergens division and is involved in method validation and application support in allergen testing. He provides scientific and technical advice to sales staff worldwide and conducts workshops and webinars for customers. He has extensive experience in the field of allergies and has been involved in projects aimed at developing both prophylactic and therapeutic treatments for allergies in children and adults. In the past, he has focused particularly on cow's milk allergy and modulating allergic response through the use of peptides.
